Char-Grilled Asparagus with Rocket Pesto and Shaved Pecorino

Ingredients

  • 48 young asparagus spears, blanched
  • 2 tablespoons lemon juice
  • 3 tablespoons extra virgin olive oil
  • sea salt flakes, for seasoning
  • 2 cups rocket leaves
  • 100g shaved Australian pecorino cheese
  • ROCKET PESTO
  • 3 cloves garlic
  • 1/4 pine nuts, toasted
  • 1/4 cup grated Australian pecorino cheese
  • 1/2 cup rocket leaves
  • 2 tablespoons extra virgin olive oil

Method

  1. 1. Sprinkle blanched asparagus with lemon juice, olive oil and salt flakes and chargrill.
  2. 2. Serve with rocket leaves, shaved pecorino and Rocket Pesto.
  3. ROCKET PESTO
  4. To make Rocket pesto, blend all ingredients in a food processor until well combined.

Tips / Handy Hints

  Try using Australian pepato, parmesan or romano cheese as an alternative to pecorino cheese.
