Carrot & Raisin Bread

  • 1/2 cup raisins
  • 2 cups wholemeal self raising flour
  • 1 egg, lightly beaten
  • 200g Australian curd-style Cottage Cheese
  • 1/2 cup Australian milk
  • 1/2 cup grated carrot
  • 1 teaspoon mixed spice

  1. Lightly butter a 20 x 10cm loaf tin, then lightly dust with flour. Combine the raisins and flour together in a large bowl. Combine the egg, cottage cheese, milk, carrot and mixed spice and add to the flour mixture. Mix together to form a firm dough. Press the dough into the prepared loaf tin. Bake at 200C for 30-40 minutes or until the bread is cooked. Turn out onto a wire cooling rack.
