Cappuccino Creme Caramel

Ingredients

  • 120g raw sugar
  • 1/2 cup water
  • 1/2 cup Australian milk, warmed
  • 1/2 cup Australian sour cream
  • 1 vanilla bean, split in half lengthways
  • 1 teaspoon instant coffee
  • 4 eggs

Method

  1. 1. Boil raw sugar and water until golden. Pour into 6 individual moulds.
  2. 2. Whisk together warmed milk, sour cream, vanilla bean, coffee and eggs. Stand 30 minutes then discard vanilla bean. Strain into moulds and bake in bain marie at 180°C for 30-40 minutes or until firm. Chill overnight.
  3. 3. To serve, carefully unmould creme caramels onto serving plates.
