Buttermilk Pikelets


  • 2 cups self raising flour
  • 1 tablespoon caster sugar
  • 1 1/2 cups Australian buttermilk
  • 1 egg
  • 30g Australian butter
  • 1 tablespoon golden syrup

  1. Sift the flour into a bowl and add castor sugar. Whisk in buttermilk and egg. Melt butter and syrup together and whisk in until all lumps are removed. Heat and lightly butter a crepe pan or non-stick frypan and cook heaped tablespoons of mixture until golden and bubbles appear on surface. Cook until golden on reverse side. Repeat with remaining batter.
