Buttermilk Chocolate Cake

Ingredients

  • 100g Australian butter
  • 3/4 cup caster sugar
  • 1 egg
  • 1/2 teaspoon vanilla essence
  • 1 3/4 cups self raising flour, sifted
  • 1/4 cup cocoa, sifted
  • 1 cup Australian buttermilk
  • ICING
  • 30g Australian butter
  • 2 teaspoon cocoa
  • 2/3 cup icing sugar
  • 1 teaspoon vanilla essence

Method

  1. Cream butter and sugar until light and fluffy then gradually beat in egg and vanilla essence. Fold in flour and cocoa alternately with the buttermilk. Spoon mixture into a buttered and lined 20cm cake tin and bake at 180C for 45-50 minutes. Turn out and allow to cool on a wire rack.
  2. For the icing, cream together all ingredients until smooth and spread over cake.
