Buttered Rack of Lamb

Ingredients

  • 30g Australian butter
  • 1/4 cup honey
  • juice of 1 lemon
  • 1/2 teaspoon dried rosemary
  • 2 racks of lamb, 6 chops each
  • 4 cloves garlic, crushed
  • roasted vegetables, for serving

Method

  1. Place all ingredients except lamb and garlic into a saucepan. Heat until butter melts. Stir well. Remove from heat. Trim racks of lamb and score fat diagonally to form a diamond pattern. Cut small holes under the fat and stud with garlic cloves. Place onto a baking tray by interlocking bones. Spoon glaze over meat and bake at 180oC for approx. 1 hour or until tender, basting frequently with glaze. Serve with roast vegetables.
