Butter Shortbread

  • 2 cups plain flour
  • 2 tablespoons rice flour
  • 1/4 cup caster sugar
  • 200g Australian unsalted butter, softened
  • 1 tablespoon water

  1. 1. Sift flours and caster sugar together. Rub in butter and stir in water to form a stiff dough.
  2. 2. Turn onto a lightly floured board and knead well until mixture combines. Divide mixture in half. Roll each portion into a 15 cm round, and place onto a buttered tray.
  3. 3. Pinch edges and cut each round into eight wedges. Prick each wedge 3 or 4 times with a fork. Bake at 150°C for 30-35 minutes until lightly golden. Allow to cool on a wire rack.
