Broccoli Cream Chowder

Serves 6


  • 400g fresh or frozen broccoli flowerettes
  • 3 medium potatoes, peeled, roughly chopped
  • 1 onion, chopped
  • 1 bay leaf
  • 1 tablespoon chopped parsley
  • 2 cups of water
  • 2 cups Australian milk
  • 1/4 cup Australian sour cream
  • 1 c 440g can cream sweet corn
  • 1/4 teaspoon nutmeg
  • hot galic bread, for serving

  1. Place broccoli, potatoes, onion, bayleaf, parsley and water in a large saucepan. Simmer for 20-30 minutes until potato is tender. Remove bayleaf. Puree in a food processor or push through a sieve. Add remaining ingredients and reheat but do not boil. Serve with hot garlic bread.
