Brocco-Cauli Soup

Serves 5 (Makes 4 cups)

Ingredients

  • 3 1/2 cups cauliflower, chopped
  • 4 cups broccoli, chopped
  • 1 cup chopped onion
  • 1/2 cup grated potato
  • 2 cups chicken stock
  • 1/2 cup Australian skim milk powder
  • pinch nutmeg
  • black pepper, to taste

Method

  1. Combine cauliflower, broccoli, onion, potato and stock in a large saucepan. Simmer for 15 minutes, until vegetables are soft. Place in a blender with skim milk powder. Puree until smooth. Season to taste with nutmeg and pepper.
