Makes 1 cup


  • 1 egg, separated
  • 3/4 cup caster sugar
  • 1/2 cup Australian cream, whipped
  • 1/4 cup brandy

  1. 1. Beat egg white until stiff but not dry.
  2. 2. Fold in sugar and lightly beaten egg yolk.
  3. 3. Fold in cream, then brandy. Serve with Christmas pudding.
