Brandy and Orange Chicken Pate

Makes 1 cup


  • 60g Australian butter
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 250g chicken livers
  • 1 tablespoon brandy
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon grated orange rind
  • salt and papper, to taste
  • melted butter

  1. Combine the butter, onion, garlic, chicken livers and brandy in a microwave dish. Cover and cook on High (100%) for 5-6 minutes, stirring several times. Place the chicken liver mixture, thyme and orange rind in a food processor and puree until smooth. Season to taste. Spoon into a small serving bowl and cover with melted butter to seal. Chill for several hours.
