Brandied Cream Veal

Serves 4


  • 4 veal steaks, battened out
  • seasoned plain flour, for coating
  • 1 egg, lightly beaten
  • 2 cups dried breadcrumbs
  • 2 tablespoons chopped parsley
  • 90g Australian ghee
  • 1 chicken stock cube, crumbled
  • 4 spring onions, sliced
  • 1 cup quartered mushrooms
  • 1 tablespoon cornflour
  • 2/3 cup Australian cream
  • 1/4 cup water
  • 2 tablespoons brandy

  1. Lightly coat veal in seasoned flour, then dip in egg. Combine breadcrumbs and parsley and coat veal. Melt 60g ghee and brown veal for 5 minutes on each side. Remove and keep warm. Melt remaining ghee, add stock cube, spring onions and mushrooms and saute until just tender. Blend cornflour with cream and water and pour into pan, stirring continuously. Simmer for approximately 2 minutes. Add brandy, mix well and pour over veal.
