Brandied Apple Flapjacks

Serves 6 - 8


  • 1 egg
  • 1 1/2 cups Australian buttermilk
  • 1 cup plain flour, sifted
  • 100g Australian butter
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons lemon juice
  • 3 tablespoons brandy
  • 1kg cooking apples, peeled, cored and sliced into rings
  • 2 tablespoons flaked almonds

  1. Combine egg and buttermilk and whisk into sifted flour. Lightly brush a non stick or crepe pan with butter and heat. Pour tablespoons of mixture into the pan and swirl to make 15cm pancakes. Cook over a low heat for 3 minutes until golden on both sides. Repeat with remaining batter to make 12 flapjacks. Layer flapjacks into a flat serving dish. Melt butter and add brown sugar, cinnamon, lemon juice and brandy. Stir until sugar melts and sauce boils. Add apples and simmer until just softened. Pour over flapjacks and sprinkle with flaked almonds. Serve immediately.
