Boysenberry Cheesecake

Ingredients

  • BASE
  • 120g Australian butter, melted
  • 250g plain sweet biscuits, crushed
  • 1 teaspoon nutmeg
  • FILLING
  • 2 x 250g tubs Australian cream cheese
  • 1/2 cup caster sugar
  • 1 x 600ml carton Australian vanilla custard
  • 1 tablespoon gelatine
  • 1/4 cup hot water
  • TOPPING
  • 1 x 425g can boysenberries, drained and syrup reserved
  • 3 teaspoons gelatine

Method

  1. Combine butter with biscuits and nutmeg. Press into the base of a buttered 28cm springform pan. Refrigerate. Cream the cheese and sugar until smooth. Beat in vanilla custard. Dissolve gelatine in hot water and add to cheese mixture. Pour into prepared pan and refrigerate until firm. Arrange berries on top of cheesecake. Heat syrup and dissolve gelatine, allow to cool slightly before pouring over cheesecake. Refrigerate until set.
