Blue Cheese and Thyme Scones

  • 50g Australian butter, chilled and chopped
  • 2 cups self raising flour
  • 3/4 cup Australian milk
  • 80g Australian blue cheese, finely crumbled
  • 2 teaspoons fresh thyme leaves
  • Australian milk, extra, for brushing
  • caramelised onions, for serving
  • Australian blue cheese, for serving

  1. 1. Rub butter into flour until mixture resembles fine breadcrumbs.
  2. 2. Add milk, blue cheese and thyme and stir with a round bladed knife stir until mixture comes together. Turn onto a lightly floured bench and knead only until just smooth.
  3. 3. Pat out mixture until 2.5cm thick, measuring 16cm x 16cm and using a sharp knife, cut into 9 squares. Place on a paper lined tray, brush with extra milk and bake at 220oC for 15-20 minutes or until golden brown, and scones sound hollow when tapped. Remove from oven and wrap in a clean towel for 5-10 minutes.
  4. 4. Serve warm with caramelised onions and extra blue cheese.

Preparation Time: 10 minutes Cooking Time: 15-20 minutes Tip: Scones are best made and enjoyed on the same day. Use a full flavoured blue cheese for robust flavoured scones.
