Serve this bircher muesli as part of a brunch for a group of friends.

INGREDIENTS

  • 1/2 cup chopped toasted macadamia nuts
  • 1/2 cup chopped toasted hazelnuts
  • 3 cups rolled oats
  • 2/3 cup toasted shredded coconut
  • 1/4 cup dried apricots
  • 2/3 cup sultanas
  • 1/4 cup pepitas
  • 1 teaspoon cinnamon
  • 3 cups freshly squeezed orange juice
  • 3 cups vanilla flavoured yoghurt
  • Fresh seasonal fruit, for serving

METHOD

  1. Combine nuts, oats, shredded coconut, dried fruit, spices and orange juice in a bowl and refrigerate, covered, overnight. Stir in half the yoghurt and serve with extra fruit and yoghurt.
