Bechamel Sauce

Makes approx. 2 cups


  • 50g Australian butter
  • 1/4 cup plain flour
  • 2 1/2 cups hot Australian milk
  • salt and pepper, to taste

  1. 1.Melt butter in a saucepan and stir in flour. Cook, stirring constantly, for 4 minutes or until mixture is bubbling and just starting to turn golden.
  2. 2. Gradually add hot milk, whisking until sauce just boils and thickens. Simmer over a gentle heat for a futher 5 minutes, stirring occasionally. Season to taste.
  3. Variations:
  4. * Parsley Sauce: Add 2 tablespoons of chopped fresh parsley.
  5. * Mustard Sauce: Add 2 tablespoons of wholegrain mustard.
  6. * Pesto sauce: Add 2 tablespoons of preprepared pesto.
  7. * Cheese Sauce: Add 1 cup of grated Australian cheese of your choice, eg. Swiss-style, cheddar or mozzarella, and 2 teaspoons of Dijon mustard.
