BBQ Flavoured Chicken Drumsticks and Potatoes

Serves 2 adults and 2 children

Ingredients

  • 7 (about 800g) chicken drumsticks, skinned
  • 500g baby new potatoes, halved
  • 2 tablespoons BBQ sauce
  • 2 teaspoons tomato paste
  • 10g Australian Butter, melted
  • 1 clove garlic, crushed, optional
  • 1/2 cup Australian Sour Cream, for serving
  • 1 spring onion, chopped, for serving

Method

  1. 1. Combine all ingredients, except sour cream and spring onions, in a large bowl.
  2. 2. Transfer to a non-stick baking dish and bake at 180°C for 1 hour or until cooked and golden, basting occassionally.
  3. 3. Combine sour cream and spring onion to serve as dipping sauce.

Tips / Handy Hints

Once cooked, cover dish with foil for 10 minutes to soften cooked potatoes for the kids. Omit garlic for younger taste buds.
