BBQ Flavoured Chicken Drumsticks and Potatoes

A one pan wonder that the kids will especially love.

INGREDIENTS

  • 7 (about 800g) chicken drumsticks, skinned
  • 500g baby new potatoes, halved
  • 2 tablespoons BBQ sauce
  • 2 teaspoons tomato paste
  • 10g butter, melted
  • 1 clove garlic, crushed, optional
  • 1/2 cup sour cream, for serving
  • 1 spring onion, chopped, for serving

METHOD

  1. Combine all ingredients, except sour cream and spring onions, in a large bowl.
  2. Transfer to a non-stick baking dish and bake at 180°C for 1 hour or until cooked and golden, basting occassionally.
  3. Combine sour cream and spring onion to serve as dipping sauce.

HANDY TIPS

Once cooked, cover dish with foil for 10 minutes to soften cooked potatoes for the kids. Omit garlic for younger taste buds.
