Basic Lemon Cheesecake

  • 250g plain sweet biscuit crumbs
  • 125g Australian butter, melted
  • 250g Australian cream cheese, softened
  • 1/2 cup Australian thickened cream
  • 1 x 400g Australian sweetened condensed milk
  • grated rind of 1 lemon
  • 1/3 cup lemon juice

  1. 1. Combine biscuit crumbs and butter and press into the base of a lined 20cm springform pan. Refrigerate.
  2. 2. Beat cream cheese and cream until smooth. Gradually beat in condensed milk, lemon rind and lemon juice. Pour into tin. Refrigerate 24 hours before serving.
