Banana Passionfruit Ice

Serves 6


  • 2 teaspoons gelatine
  • 2 tablespoons hot water
  • 1 1/2 cups Australian skim milk powder
  • 1/4 cup caster sugar
  • 1 2/3 cups cold water
  • pulp from 3 passionfruits
  • 2 bananas, sliced
  • 1 tablespoon lemon juice

  1. Dissolve gelatine in hot water. Add milk powder and sugar to cold water and beat until smooth and thick. Add gelatine and beat well. Pour into ice cream trays and semi-freeze. Spoon into a bowl with passionfruit pulp and beat. Fold through bananas tossed in lemon juice, pour into wet ice cream mould and freeze until firm. Unmould by covering with a hot cloth.
