Banana Muesli Slice

Serves 6


  • 60g Australian butter
  • 2 tablespoons honey
  • 1 1/2 cups toasted muesli
  • 1/4 cup fresh orange juice
  • 1 tablespoon gelatine
  • 1 1/2 cups mashed banana
  • 1 1/2 cups Australian natural yogurt

  1. Heat butter and honey together in a medium sized saucepan, stirring until well combined. Remove from heat and stir through muesli. Press muesli mixture into the base of a foil lined 20cm sqaure cake tin. Bake at 180°C for 10 minutes. Allow to cool. Heat the orange juice in a small saucepan and sprinkle over gelatine. Stir briskly until dissolved. Allow to cool slightly before folding into combined banana and yogurt. Pour over the muesli base. Refrigerate until set. Slice into squares and serve.
