Banana and Yogurt Pancake Stacks

Serves 4/Makes 8 pancakes

Ingredients

  • 1 cup self-raising flour
  • 1/4 cup Australian skim milk powder
  • 1 tablespoon caster sugar
  • 3 eggs
  • 2 x 200g tubs Australian low fat fruit flavoured yogurt
  • Australian butter, for coating pan
  • 2 bananas
  • cinnamon, for sprinkling

Method

  1. Combine the flour, milk powder and sugar together in a large bowl. Make a well in the centre and gradually whisk in the eggs and 1 tub yogurt to form a smooth batter. Lightly coat a frypan or crepe pan with butter and heat. Pour in 1/4 cup of batter and cook over a medium heat until bubbles appear on the surface and the underside is golden. Turn and cook the other side until golden. Continue with remaining mixture, buttering surface of the pan when necessary, to make 8 pancakes.
  2. To serve, slice bananas and combine with remaining yogurt and cinnamon. Place over 1 pancake, top with another pancake and more banana yogurt. Sprinkle with cinnamon and serve.
