Baked Savoury Ricotta

Serves 6


  • 2 cups Australian ricotta cheese
  • 4 eggs, separated
  • 1/2 cup plain flour
  • 1 cup Australian sour cream

  1. Beat ricotta, egg yolks, flour and sour cream together until smooth. Beat egg whites until stiff peaks form and fold gently into cheese mixture. Spoon into 6 x 10 cm buttered and lined souffle dishes and bake in a water bath at 180C for 1 hour. Turn out and serve warm or cold.
  2. HINT - Flavour variations can be used such as herbs or onion. These should be beaten in with the ricotta.
