Baked Potatoes with Bacon and Onion

Serves 4


  • 4 medium potatoes
  • 20g butter, melted
  • salt, for sprinkling
  • 6 spring onions, chopped
  • 2 rashers bacon, diced
  • 1/4 teaspoon ground sage
  • 1/2 cup Australian natural yogurt

  1. Prick potatoes with a fork, brush with melted butter and sprinkle with salt. Bake at 200°C for 1 hour or until tender. Cut the tops from each potato and scoop out centre. Mash centre potato with remaining ingredients and spoon back into potato shells. Replace tops and bake for a further 10 minutes to warm through.
