Baked Chicken and Cheese Eggplants

Ingredients

  • 1 eggplant
  • 10g Australian butter
  • 1 onion, chopped
  • 1/2 cup finely chopped cooked chicken
  • 1 egg
  • 1/3 cup Australian cottage cheese
  • salt and ground black pepper, to taste
  • 1/4 cup grated Australian cheddar cheese

Method

  1. Halve the eggplant lengthways, scoop out the flesh and reserve leaving approximately 5mm of flesh on the skin. Melt the butter and saute the onion. Chop the reserved eggplant and combine with chicken. Add to the onion and cook for 5 minutes. Combine egg and cottage cheese and add to the eggplant. Cook for 5 minutes, stirring occasionally. Add seasonings to taste. Spoon the mixture into eggplant shells and sprinkle with cheddar cheese. Bake at 180C until cheese has melted and is golden.
