Baked Bean and Potato Sailing Boats

  • 2 medium potatoes
  • 220g can baked beans
  • 1/4 cup chopped ham
  • 2 slices Australian Cheddar Cheese
  • 4 carrot sticks

  1. 1. Prick potatoes all over with a fork. Place directly onto oven rack and bake at 200°C for 1 hour or until cooked.
  2. 2. Cut in half and scoop out flesh, leaving skins intact.
  3. 3. Mash flesh and add baked beans and ham.
  4. 4. Spoon mixture back into potato shells. Cook for a further 5 minutes or until heated through.
  5. 5. Cut cheese in half diagonally and insert into potato mixture to look like sails, using carrot sticks for masts.
  6. Alternative Fillings:
  7. *Egg and Mayonnaise - 2 hard boiled eggs, roughly chopped, 2 tablespoons mayonnaise, 1 teaspoon chopped fresh parsley.
  8. *Salmon and Creamed Corn - 210g can pink salmon, drained and flaked, 130g can creamed corn.

Tips / Handy Hints

Leave the salmon bones in for extra calcium and mash them well with a fork. Carry through with a nautical theme - the children will love wearing sailors' hats made of paper.
