Athletic Oatcakes

Makes approximately 18 (Serves 9)


  • 2 cups self raising flour
  • 1 1/2 cups quick oats
  • 50g Australian butter, melted
  • 1 egg, lightly beaten
  • 3/4 cup Australian buttermilk

  1. Preheat oven to 220°C. Mix flour and oats. Combine remaining ingredients. Add to flour and oats. Mix to combine. Turn out onto lightly floured board. Knead until smooth. Roll out to 1 to 1 1/2cm thickness and cut out using a 7cm scone cutter. Bake on oven trays 10-15 minutes until lightly coloured on top. Serve hot as an alternative to bread, with your favourite topping.
