Apricot Frozen Yogurt

Makes 1 litre


  • 500g Australian natural yogurt
  • 1 x 425g can apricots, drained and pureed
  • 1/4 cup caster sugar
  • 1 cup Australian evaporated milk, chilled

  1. Combine yogurt, apricot puree and sugar together. Beat evaporated milk until thick and fold into yogurt mixture. Pour into a bowl and freeze for 2 hours. Whip until thick and frothy and return to freezer for another 2 hours. Whip once more then place into a freezer container and freeze until firm.
  2. NOTE: If frozen yogurt is too hard to scoop, set aside in the refrigerator for 15-20 minutes before scooping.
