Honey Joys are a childhood favourite from birthday parties and celebrations and you will love the addition of coconut and apricots to this version.

INGREDIENTS

  • 90g butter
  • 1/3 cup honey
  • 1 cup self-raising flour
  • 1/2 cup desiccated coconut
  • 1 1/2 cups cornflakes
  • 1/2 cup chopped dried apricots

METHOD

  1. Combine butter and honey in saucepan and stir until butter just melts. Cool for 5 minutes.
  2. Fold in remaining ingredients and mix well.
  3. Drop tablespoonfuls of mixture onto greaseproof paper lined trays.
  4. Bake at 180°C for 12 minutes. Transfer to cake rack to cool. Store in airtight container.

HANDY TIPS

Any chopped dried fruit can be substituted for the apricots. Make larger cookies for adults. Serve with a chilled glass of milk for an all-round healthy treat.
