Apricot Drops

Makes 24 biscuits


  • 90g Australian Butter
  • 1/3 cup honey
  • 1 cup self-raising flour
  • 1/2 cup desiccated coconut
  • 1 1/2 cups cornflakes
  • 1/2 cup chopped dried apricots

  1. 1. Combine butter and honey in saucepan and stir until butter just melts. Cool for 5 minutes.
  2. 2. Fold in remaining ingredients and mix well.
  3. 3. Drop tablespoonfuls of mixture onto greaseproof paper lined trays.
  4. 4. Bake at 180°C for 12 minutes. Transfer to cake rack to cool. Store in airtight container.

Tips / Handy Hints

Any chopped dried fruit can be substituted for the apricots. Make larger cookies for adults. Serve with a chilled glass of milk for an all-round healthy treat.
