Apricot Dream

Ingredients

  • 1 x 850g can apricot halves, drained
  • 1 egg
  • 2 tablespoons sugar
  • 1 cup Australian sour cream (18% milkfat)
  • cinnamon, for sprinkling

Method

  1. Place the apricot halves face down over the base of a 26cm pie plate. Blend together the egg, sugar and sour cream and pour over the apricots. Lightly sprinkle the cinnamon over the topping and bake at 190°C for 25-30 minutes or until set.
