Apricot Creamed Rice

Ingredients

  • 1 x 425g can apricots, drained
  • 1/3 cup rice, cooked
  • 1 cup prepared Australian pouring custard
  • 1 egg, beaten
  • 6 teaspoons sugar
  • nutmeg

Method

  1. Place apricots in base of an ovenproof dish. Combine rice, custard, egg and sugar and pour over apricots. Sprinkle with nutmeg and bake at 180°C for 35-40 minutes. Serve hot or cold.
