Apricot Buckwheat Pancakes

  • 3/4 cup buckwheat flour
  • 2 tablespoons caster sugar
  • 1/2 cup chopped dried apricots
  • 1 egg, lightly beaten
  • 1 cup Australian buttermilk
  • Australian butter, for frying
  • extra Australian butter, jam or honey, for serving

  1. 1. Combine flour, sugar and apricots in a bowl.
  2. 2. Gradually whisk in egg and buttermilk until smooth.
  3. 3. Melt a little butter in a frypan and cook 1/4 cup of mixture until bubbles form around the edges. Flip over and cook until underside is golden. Repeat with remaining mixture.
  4. Serve pancakes with butter, jam or honey.
  5. For a dessert idea, serve pancakes with canned apricot halves and ice-cream.
