Apricot Bran Loaf

Makes 1 loaf

Ingredients

  • 1/2 cup processed bran
  • 3/4 cup brown sugar
  • 1/2 cup chopped dried apricots
  • 1/2 cup sultanas
  • 1/4 cup Australian light sour cream
  • 1 cup Australian milk
  • 2 cups self raising wholemeal flour, sifted
  • 1/4 teaspoon bicarbonate soda
  • 1/2 cup chopped walnuts
  • TOPPING
  • 1 tablespoon Australian butter
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 3 tablespoons chopped walnuts

Method

  1. 1. In a bowl combine together the bran, sugar, dried fruits, Australian sour cream and Australian milk. Leave to soak in the refrigerator for 2 hours or overnight if preferred.
  2. 2. Add the flour, soda and walnuts. Mix thoroughly.
  3. 3. Bake in a buttered loaf tin at 180°C for 45 minutes. Spread over the topping and continue to bake for 10-15 minutes. Serve sliced and buttered.
  4. TOPPING
  5. Blend all ingredients in a saucepan and heat gently until combined.
