Applejack Ice Cream

Serves 8


  • 2 medium size green apples, peeled and cored
  • 1/2 cup finely chopped raisins
  • 1/4 cup lemon juice
  • 2 teaspoons gelatine
  • 1 tablespoon boiling water
  • 1 x 375g can Australian evaporated milk, well chilled
  • 1/2 cup caster sugar
  • 1 teaspoon cinnamon

  1. Grate the apples and combine with raisins and lemon juice. Dissolve gelatine in water. Beat the evaporated milk until stiff, gradually adding the gelatine, sugar and cinnamon. Fold in the apple mixture and pour into a freezer tray or plastic container. Freeze until firm.
  2. Stand ice cream in refrigerator 20 minutes before scooping.
  3. NOTE: For best results churn in an ice cream maker following manufacturers instructions.
