Apple Teacake

Serves 6 - 8


  • 125g Australian butter
  • 1 cup brown sugar
  • 2 eggs, lightly beaten
  • 2 cups self-raising flour
  • 1/2 cup Australian milk
  • 1/2 cup chopped walnuts
  • 1 medium apple, peeled, cored and cut into thin wedges
  • Australian butter, extra, melted
  • cinnamon sugar, for sprinkling

  1. Cream butter and sugar together until light and fluffy. Beat in eggs one at a time. Fold in sifted flour alternately with milk. Fold in walnuts. Spoon mixture into a buttered and lined 20cm cake tin. Smooth over with a spatula and fan apple slices on top. Brush with extra butter. Bake at 180°C for 55-60 minutes. When cooked, brush again with butter and sprinkle with cinnamon sugar. Serve hot or cold.
