Apple Sultana Loaf

Serves 8


  • 2 cups self raising flour, sifted
  • 3 teaspoons mixed spice
  • 1/2 cup brown sugar
  • 2 eggs, beaten
  • 200g Australian low fat fruit yogurt
  • 1 apple, unpeeled, grated
  • 1/2 cup sultanas
  • 2 tablespoons slivered almonds, toasted
  • honey, for serving (optional)
  • Australian cream cheese, for serving

  1. Combine flour, mixed spice and sugar in a large mixing bowl. Make a well in the centre, and stir in combined eggs and yogurt. Add apple, sultanas and almonds, mixing thoroughly. Place mixture into a buttered 20cm ring loaf pan. Bake at 200°C for 25 minutes or until cooked. Allow to cool slightly before turning out. Glaze with warmed honey if desired and serve sliced with cream cheese.
  2. **This recipe is suitable for lacto-ovo vegetarians who have adopted a vegetarian diet for health reasons.

Tips / Handy Hints

Make cake batter as above. Pour into a buttered 22cm microwave ring pan. Cook elevated on a rack on High(100%) 5-5 1/2 minutes. Allow to stand for 5 minutes before turning out. Serve as above.
