Apple Meringue Pie

Serves 6


  • 1 cup plain flour
  • 1 tablespoon icing sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 60g Australian butter
  • 1 tablespoon water
  • 4 cooking apples, finely sliced
  • 1 tablespoon plain flour
  • 1 tablespoon sugar
  • 1/3 cup chopped dried apricots
  • 2 egg whites
  • 1/3 cup caster sugar
  • 1 tablespoon desiccated coconut

  1. Sift together the dry ingredients and rub in the butter. Mix to a stiff dough with the water. Roll the pastry out thinly. Place into the base of a 21cm buttered pie plate. Combine the filling ingredients together in a bowl, lightly coating the apples with the flour. Place the filling into the pie base. Beat the egg whites until stiff. Add the sugar and beat until smooth. Fold in the coconut then spread the meringue over the apples and bake at 190°C for 45 minutes. Serve hot or cold.
