Apple, Ginger and Mint Lassi

  • 3 green apples
  • 2cm piece fresh ginger (10g), grated
  • 2 tablespoons loosely packed mint leaves
  • 400g reduced fat natural yogurt
  • 2 teaspoons caster sugar
  • 1/2 cup ice cubes

  1. 1. Push apples through juice extractor into a jug. Blend with remaining ingredients until smooth. Pour into serving glasses and serve immediately.

Tips / Handy Hints

Preparation Time: 5 minutes If a juicer is unavailable, try substituting apples for 350ml of cloudy apple juice.
