Apple, Ginger and Mint Lassi

This refreshing twist on a lassi uses the classic combination of apple and ginger.

INGREDIENTS

  • 3 green apples
  • 2cm piece fresh ginger (10g), grated
  • 2 tablespoons loosely packed mint leaves
  • 400g reduced fat natural yoghurt
  • 2 teaspoons caster sugar
  • 1/2 cup ice cubes

METHOD

  1. Push apples through juice extractor into a jug. Blend with remaining ingredients until smooth. Pour into serving glasses and serve immediately.
