This recipe was designed for school canteens, but is also suitable for home. These snack cups are scrumptious and are a fabulous make and take breakfast on the run!

INGREDIENTS

  • 10 apples, peeled, cored and sliced
  • ½ cup water
  • ¼ cup sugar
  • 1kg reduced fat vanilla yoghurt
  • 2 1/2 cups low fat muesli

METHOD

  1. Combine apples, water and sugar in a saucepan and cook, stirring occasionally, until apples are just tender, about 15 minutes. Cool and refrigerate until required.
  2. Layer apples, yoghurt and muesli into 10 x 225ml disposable serving cups, finishing with a layer of yoghurt and a sprinkling of muesli. Cover and refrigerate until required.

HANDY TIPS

Granny Smith apples are the best for cooking! The stewed apples can be made in advance and kept refrigerated for 5 days before assembly. Substitute stewed apples for canned fruit in natural juice if desired. Apple Crumble Cups will only last a day or two in the fridge once assembled, as the muesli can become soggy.
