Apple Cardamon Fritters

Makes 24


  • 1 cup plain flour
  • pinch salt
  • 1 cup Australian milk
  • 1 egg, separated
  • Australian ghee, for frying
  • 3 cooking apples, peeled and each cut into 8 wedges
  • cinammon sugar, for coating
  • ground cardamon, for coating
  • Australian cream, whipped, for serving

  1. Sift the flour and salt into a bowl and make a well in the centre. Gradually whisk in milk and egg yolk until smooth. Allow to stand for 30 minutes. Beat egg white until soft peaks form. Gently fold into batter. Melt sufficient ghee in a large heavy based frypan to coat the base to 1cm depth. Heat ghee until hot. Dip apples in batter and fry until golden brown. Whilst fritters are still warm toss in a combination of cinnamon sugar and cardamon. Serve hot with whipped cream.
