Apple Berry Pancakes

Serves 8


  • 1 cup self raising flour
  • 1 tablespoon caster sugar
  • 1 egg
  • 3/4 - 1 cup Australian cultured buttermilk
  • 1 apple, grated
  • 1 punnet strawberries, or any berry in season
  • 1 qty Custard Sauce (see recipe)
  • 3 tablespoons custard powder
  • 2 cups Australian skim milk
  • liquid sweetener, to taste

  1. 1. Sift flour and sugar into a bowl. Lightly beat egg and make up to 1 cup with buttermilk. Stir into flour until smooth. Stir in grated apple.
  2. 2. Drop large spoonfuls of mixture into a hot non-stick frypan. Flatten out slightly. When golden brown on the bottom and bubbles appear on the surface, turn over and cook until browned. Serve hot with berries and custard sauce.
  4. 1. Mix custard powder with a little milk to form a smooth paste. Heat remaining milk in a saucepan. Add custard powder mixture and stir until thickened. Add liquid sweetener to taste.
