Apple Banana Shortcake

Serves 6


  • 125g Australian butter
  • 1/2 cup caster sugar
  • 1 egg
  • 1 cup self-raising flour
  • 1 cup plain flour
  • 2 tablespoons lemon butter
  • 2 cooking apples, peeled and grated
  • 1 banana, sliced
  • grated rind and juice of 1/2 lemon
  • 1 tablespoon sugar

  1. 1. Beat butter and sugar until pale and creamy. Add egg beating well until combined.
  2. 2. Sift in flours and mix to a soft dough. Divide dough into two. Roll each into a round to fit a 20cm buttered cake tin. Place one round in tin, spread with lemon butter and top with remaining ingredients.
  3. 3. Place second round in tin and firmly press down around sides. Brush with water and sprinkle with sugar. Bake at 180°C for 40 minutes. Serve hot or cold with whipped cream, custard or ice cream.
