Apple and Whiskey Bread n Butter Pudding

Serves 4


  • 2 cups Australian vanilla custard
  • 1 egg
  • 2 tablespoons whiskey
  • 1 granny smith apple, grated
  • 2 teaspoons finely grated orange rind
  • 6 slices raisin bread
  • 75g Australian butter, softened
  • 1/3 cup apricot jam

  1. 1. Whisk togeter the custard, egg and whiskey. Stir in the apple and orange rind.
  2. 2. Spread the bread with butter, and then jam. Remove the crusts and cut into small triangles.
  3. 3. Pour half of the custard mixture between 4 x 1 cup ramekins. Arrange bread traingles in each ramekin and pour over remaining custard mixture. Allow to sit for 10 minutes before baking at 180C for 12-15 minutes.
