Appetiser: Feta Antipasto Quartet

  • Feta Frittata:
  • 20g Australian Butter
  • 4 (120g) spring onions, finely chopped
  • 200g Australian Feta Cheese, cubed
  • 1/2 cup (12g) basil leaves, coarsely shredded
  • 1/2 (100g) red capsicum, cut into julienne strips
  • 20g semi dried tomatoes, cut into strips
  • 5ml reserved semi dried tomato oil
  • 5 x 60g eggs, lightly beaten
  • 125ml Australian Buttermilk
  • Feta Salsa:
  • 200g Australian Feta Cheese, crumbled
  • 1 (170g) Spanish onion, roughly chopped
  • 40ml olive oil
  • 400g tomatoes, seeded and chopped
  • 40ml sweet chilli sauce
  • chopped coriander and basil leaves
  • cracked black pepper, to taste
  • Baby Rocket and Feta Salad:
  • 200g baby rocket leaves
  • 200g Australian Feta Cheese, crumbled
  • 100g roasted macadamia nuts
  • 50g caperberries, halved
  • 100g semi dried tomatoes
  • 60ml macadamia nut oil
  • Feta and Pesto Stack:
  • 300g Australian Feta Cheese, crumbled
  • 150g pesto sauce
  • 60ml olive oil
  • continental parsley leaves, for garnish
  • assorted breads, for serving

  1. Feta Frittata:
  2. Melt butter in a large frying pan and saute spring onions until softened. Remove from heat and cool slightly. Add remaining ingredients and stir gently until well combined. Pour mixture into a buttered and base-lined 22cm round ovenproof dish. Bake at 180°C for 45 minutes or until just set. Allow to cool before cutting into wedges.
  3. Feta Salsa:
  4. Toss all ingredients together.
  5. Baby Rocket and Feta Salad:
  6. Combine rocket, feta cheese, macadamia nuts, caperberries and semi dried tomatoes. Drizzle with macadamia nut oil just prior to serving.
  7. Feta and Pesto Stack:
  8. For each serving, layer 30g crumbled feta with 15g pesto into a 3.5cm round cutter, beginning and finishing with a feta cheese layer. Gently lift off cutter. Drizzle with olive oil and garnish with parsley just prior to serving.
  9. For each serving:
  10. Place a small wedge of Feta Frittata, 1/3 cup Feta Salsa, 1 cup Baby Rocket and Feta Salad and a Feta and Pesto Stack on each plate. Serve with assorted breads.
