Anzac Biscuits

  • 1 cup plain flour
  • 1 cup rolled oats
  • 3/4 cup desiccated coconut
  • 1 cup caster sugar
  • 125g Australian butter
  • 1 tablespoon golden syrup
  • 1 1/2 teaspoons bicarbonate of soda
  • 2 tablespoons boiling water

  1. 1. Combine flour, oats, coconut and sugar in a large bowl.
  2. 2. Melt butter and golden syrup together over a gentle heat. Mix soda into boiling water, then add to butter mixture. Stir into dry ingredients.
  3. 3. Allowing room for spreading, place tablespoons of mixture on buttered baking trays and flatten slightly with a fork. Bake at 180°C for 10-15 minutes until biscuits are golden brown. Cool on trays for 5 minutes before transfering to a wire rack to cool completely.
