Angel Food Cheesecake

  • 150g Australian butter, melted
  • 300g plain sweet biscuits, crushed
  • 300g Australian cream cheese, softened
  • 3/4 cup caster sugar
  • 2 tablespoons cornflour
  • 150ml Australian cream
  • 2 teaspoons vanilla essence
  • 4 egg whites
  • Whipped Australian cream and fresh fruit to decorate

  1. Combine melted butter and biscuit crumbs and press onto the base of a buttered and lined 25cm springform tin. Place cream cheese in a bowl and beat in sugar and cornflour. Stir in cream and vanilla essence. Beat egg whites until stiff, then thoroughly fold egg white mixture into cheese mixture. Pour onto base and bake at 160C for 1 1/2 hours or until firm but spongy to touch and allow to cool. Remove from tin and chill for 2-3 hours. Decorate with whipped cream and fresh fruit.
