Serves 2


  • 1 x 140g tub peaches in natural juice
  • 1 tablespoon passionfruit pulp
  • 2 teaspoons desiccated coconut
  • 1 cup Australian reduced fat regular or evaporated Milk, chilled
  • 1 cup apricot nectar
  • 1 scoop Australian vanilla ice cream
  • 2 ice cubes, crushed
  • extra desiccated coconut, for sprinkling

  1. Blend the peaches, passionfruit and coconut together in a blender until finely chopped. Add the remaining ingredients and blend until thick and frothy. Serve sprinkled with extra coconut.
