Almond Peach Cream

Serves 6


  • 250g Australian cottage cheese
  • 1/2 cup caster sugar
  • 1/4 cup ground almonds
  • 1 teaspoon vanilla essence
  • 1 tablespoon gelatine
  • 1 x 825g can sliced peaches, drained and juice reserved
  • 2 egg whites
  • flakes almonds, for garnish
  • Australian whipped cream, for garnish

  1. Beat cheese and sugar together until smooth. Blend in almonds and vanilla. Add the gelatine to one cup reserved peach juice and heat over boiling water until gelatine is dissolved. Gradually blend into cheese mixture. Allow to thicken slightly in the refrigerator, but not set. Beat egg whites until stiff. Gently fold into mixture. Place half the peaches into the base of 6 individual dessert dishes. Pour mixture on top and refrigerate until set. Garnish with remaining peaches and flaked almonds. Serve with whipped cream.
